Patterson Park residents, rejoice. A new bagel shop is coming soon from the team behind Café Dear Leon, the wildly popular Canton bakery known for its crab tamago sandwiches, croissants and viral crab dip bagel.

Co-owners Cheolsoo “Charles” Lee and Min Kim and their new partner, Byung Kang, will open Little Ian’s Bagels at 3101 E. Baltimore St. in the fall.

“We’re not going to rush into opening,” Kim said. “It could be in September. It could be in October. It could be in November.”

What’s clear is Kim is focused on perfecting a bagel recipe before debuting the eatery in the former Pie Time space. He is aware everyone has an opinion when it comes to the holey bread.

“Everyone is making a lot of assumptions,” Kim said. “I think everyone’s very excited.”

The bagels at the Patterson Park spot will be different from the crab dip bagel at Café Dear Leon and its sister concept La Maison, which is made with a softer, sweeter bread.

“We already have that recipe, so we don’t need to be testing,” Kim said.

Kim said the bagels at Little Ian’s will be closer to a “really well-made country loaf,” though the final product and recipe are still in the works.

“Don’t come with expectations,” he said. “Try it first.”

The team will continue to work with Ceremony Coffee Roasters to provide drip coffee — a shift from the espresso offerings at Café Dear Leon. Little Ian’s will also offer freshly squeezed orange juice and matcha drinks.

The bagel shop is the latest eatery for Lee and Kim, who also co-own La Maison and Italian restaurant Love, Pomelo.

And they’re keeping busy as they focus on the soft opening this weekend of yet another venture: their new pizza concept Flour and Wood at La Maison. After the Remington café closes at 3 p.m., the seating area is reset for dinner with different furniture, and a wood-fired oven is lit to cook handmade 12-inch pizzas. The opening menu includes a Sicilian-inspired eggplant pie, a pepperoni pie, one topped with stracciatella (a soft Italian cheese) and a white pie.
